A sourdough starter is a colony of wild yeast and lactic acid bacteria living in flour and water. When conditions turn bad — no food, wrong temperature, contamination — the colony doesn't flip off like a light switch. It goes dormant. The organisms hunker down and wait.
True death happens in specific circumstances: prolonged temperatures above 140°F, contamination by mold that spreads through the entire jar, or complete desiccation with no revival attempt for years. If your starter has been sitting in the fridge for a few weeks (or even a few months), it almost certainly has viable organisms still in it. The question is whether they're strong enough to bake with.
That's what these tests measure. Not just presence, but strength.
Test 1: The Smell Test — Your First Real Data Point

Pull the lid off and take a real sniff. This is information. A healthy starter — even a neglected one — smells like something fermented. Tangy. Maybe vinegary. Maybe boozy, like beer or overripe fruit. There's an edge to it. That edge is lactic and acetic acid doing their job.
What you don't want to smell is rot. Not sour, not sharp — rot. That distinct garbage-like or vomit-adjacent odor signals that something has taken over that isn't your target organisms. If you also see pink, orange, or fuzzy growth anywhere in the jar, stop. That's contamination, not dormancy. Discard the whole thing — jar and all — and start fresh.
If it smells sour, funky, vinegary, or even like acetone (nail polish remover — this is just excess acetic acid from hunger), your starter has viable organisms. Move to Test 2.
Test 2: The Visual Check — What the Surface Tells You
Look at the surface and the sides of the jar. A dormant but living starter shows hooch — that gray or dark liquid layer sitting on top. This is alcohol produced by yeast activity. It looks grim. It is actually good news.
Hooch means fermentation happened. It means organisms were alive enough to eat, produce gas and alcohol, and exhaust their food supply. Pour off the hooch (or stir it back in if you want extra sour flavor), and you're looking at a starter that needs feeding, not a funeral.
Look at the jar sides too. Old dried starter clinging to the glass — that "high water mark" — tells you there was a rise and fall at some point. Your starter had a good feeding at some point and peaked. That's a living culture that has simply run out of food.
Test 3: The Feed and Watch Test — 12 Hours of Truth

This is the test that actually tells you whether your starter can perform. Discard all but 25 grams of your starter. Feed it 50 grams of all-purpose flour and 50 grams of room-temperature water (a 1:2:2 ratio). Stir well. Mark the jar with a rubber band or piece of tape at the current level. Set it somewhere that stays between 70°F and 76°F. Then wait.
At 4 hours, check it. At 8 hours, check it again. At 12 hours, final check. A healthy, active starter at 74°F will typically double within 4 to 8 hours and show a domed top at its peak. A weakened but recovering starter might take the full 12 hours — or even longer — to show significant rise. Any rise at all is a positive sign.

Test 4: The Float Test — What It Actually Means
The float test has a reputation it doesn't quite deserve. Here's what it is: drop a small spoonful of starter — about half a teaspoon — into a glass of room-temperature water. If it floats, the theory goes, it's ready to bake with. If it sinks, it's not ready.
The float test measures gas content, not overall health. A starter floats when it's full of CO2 bubbles — which happens at or near peak activity. It tells you the yeast is currently producing gas. It does not tell you whether your starter is strong enough to consistently leaven bread over multiple bakes.
Use the float test as a same-day baking check, not a health assessment. If your starter floats, it's currently active — go bake. If it sinks, check the timing: you might have caught it before its peak (too early) or after collapse (too late). Neither means it's dead.
Test 5: The Bake Test — The Only Test That Counts for Bread

All the other tests are proxies. This one is direct. Mix a simple test loaf — 100 grams of your starter, 400 grams of bread flour, 300 grams of water, 9 grams of salt. Follow a basic bulk fermentation schedule. Does it double in the bulk? Does the shaped dough pass the poke test — spring back slowly when you indent it with a floured finger? Does the baked loaf have an open crumb and good oven spring?
A starter that passes the bake test is alive and performing. Period. I've had starters that looked borderline on every other test but produced a gorgeous loaf. And I've had starters that floated confidently and then delivered a brick. The bake test settles it.
If your loaf is dense and barely rose, your starter needs more rehabilitation time — not disposal. Keep feeding it once or twice a day at room temperature. Most weakened starters recover fully within 5 to 7 days of consistent feeding.
When a Starter Is Actually Dead (And What to Do)
Real, unrecoverable death is rare. But it happens. Your starter is gone if you see pink, orange, or black fuzzy mold growing through the culture — not just on the surface. It's gone if it smells like pure rot after three consecutive feedings at warm temperatures. It's gone if it was exposed to temperatures above 140°F for more than a few minutes (think: left in a hot car, accidentally microwaved, placed on a burner).

How to Revive a Weak Starter: The 5-Day Protocol
Weak but living is the most common situation. Here's what actually works. For five days, feed at the same time every day. Discard down to 25 grams, then add 50 grams flour and 50 grams water. Keep the jar at 72°F to 76°F — consistency matters more than exact temperature. Whole wheat or rye flour for the first two feedings can jump-start activity because those flours carry more wild yeast than white flour does.
By day 3, you should see reliable bubbling. By day 5, most starters are doubling within 6 to 8 hours of feeding and are ready to bake with. If you're not seeing progress by day 4, switch to twice-daily feedings and drop your ratio to 1:1:1 (equal parts starter, flour, water by weight).
Patience is the main ingredient here. A starter that took years to develop its character doesn't disappear in a few weeks of neglect. It waits.

Almost certainly yes. Cold slows microbial activity dramatically — at 38°F, your starter's organisms are barely metabolizing. How do I know when my starter is strong enough to actually bake bread?
