Why Does Sourdough Starter Smell Like Nail Polish?

Acetone / nail polish smell is caused by ethyl acetate — a byproduct of yeast metabolizing in a low-food environment. It sounds scary. It isn't. Your starter is not ruined. It's just hungry.

Fix: discard all but 20g of starter. Feed with equal parts fresh flour and filtered water. Put it somewhere warm (75–80°F). Give it 8 hours. The acetone smell will be gone and you'll have a bubbly, rising starter again. We've revived starters that had that smell for over two weeks.

Is It Normal for a New Starter to Smell Bad?

Yes. Days 1–4 of a brand-new starter can smell genuinely off-putting — sour in a wrong direction, sometimes cheesy or vaguely unpleasant. That's the bacterial succession phase.
